This artisan cheese is made by hand by Paul Thomas on Lyburn Farm just south of Salisbury.
Also known as "Old Smales", this is a firm pressed pasteurised cows’ milk cheese with a washed rind and no lack of flavour. With a crystalline texture which becomes more intense with age, the cheeses are matured for about 18 month+ and are reminiscent of an Aged Gouda with a distinctive nuttiness in flavour. Old Winchester is made with vegetarian rennet and is a great replacement for Parmesan Reggiano, the famous Italian cheese, over pasta dishes. Absolutely delicious as a table cheese.
