An unusual, semi hard goats milk cheese that is washed in a brine solution through its maturation. Rich and nutty in flavour, Rachel is made near Shepton Mallet in Somerset by Whitelake cheese makers.

Rachel is our favorite White Lake Cheese, from Shepton Mallet in Somerset. It is a washed rind cheese, rich and nutty in flavour, semi-hard made from vegetarian, unpasteurised goat's milk.

White Lake's Pete Humphries says that "Rachel was named after a friend of mine - like the cheese she is sweet, curvy and slightly nutty".  We would add that anything made by the people who make White Nancy has to be highly recommended!
