This is "reproduction" of the original Stilton, before UK laws required the cheese to be pasteurised ... the result is a new, outstanding British classic. Stichelton is made slowly, with a gentle acidification of the milk and traditional hand-ladling, before being rubbed up and allowed to form its classic glossy, ruby-red coat. Piercing late (about 10-12 weeks) and aging slowly produces an immensely complex cheese – toasty, nutty and sweet with a creamy light texture and gentle blue note. This will be the star attraction on any cheeseboard or gift. As with all our cheeses, Stichelton was awarded a Gold Medal at the last British Cheese Awards.
