A pyramid-shaped goat's cheese, covered with ash and white mould. The fluffy, curdy texture has just a little softening under the rind with a taste of lemon and hint of almond. Made by hand in the Cotswold village of North Cerney, Gloucestershire this unpasteurised goat's milk is made with vegetarian rennet. It comes wrapped as an individual 250g cheese.
Hand made in Northumberland from pasteurised Goats' Milk and vegetarian rennet, this is an extravagant cheese. Mould-ripened, velvety soft on the palate, light-textured and pleasingly refined, with a delicate edge to lengthen and liven things up. This international prize-winner is queen of the cheeses. Wigmore is a washed curd cheese ... giving the cheese its lovely oozy texture. We mature the cheese to between 6 and 8 weeks when the rind changes significantly as it ages, starting out with a white Penicillium rind, and then developing brownish-mauve spots as it ages. The flavour ranges from mild and milky when young to nutty and meaty as it ages. Made from unpasteurised ewe’s milk and vegetarian rennet Wigmore has been described by cheese guru Juliet Harbutt as a "taste sensation of wild flowers, burnt caramel, macadamia nuts and roast lamb." Make up your own mind! Regular: 1/2 cheese approx. 200g or Large: whole cheese approx. 400g.
The Montgomerys have made cheese on their farm near Yeovil in south Somerset for three generations. The epitome of traditional cheddar, made in a truly traditional way – matured for over a year wrapped in muslin cloth on wooden shelves - this wonderful cheese has won numerous awards including a Gold at this years World Cheese Awards. Do not confuse this with a supermarket cheddar it has a drier texture and more complexity and is now our best selling Cheddar.
